Foodie Friday – Chicken Paillard on Baby Greens

If you’ve been following this blog for any length of time, you’ll know that I love my faith, family, friends, and photography … but one more thing that is right up there is FOOD … oh my word I love food!!  So occasionally, I will be posting Foodie Fridays here on the blog.  If you enjoy food half as much as I do, you’re sure to like these posts.  Now, I should warn you, I am first a recipe follower … then a recipe tweeker … but I am by no means talented enough to come up with recipes on my own!  I will, whenever possible, post a link to the recipes I use so you can try them out too!  That being said … on to the first of many Foodie Fridays!  (which will alternate with Family Fridays … until I find another F word that I want to blog about, in which case we might just have a rotating schedule … but I digress …)

I now give you … Chicken Paillard on Baby Greens …

This is from Rachael Ray’s book 30 Minute Meals 2.  I am a super busy woman (aren’t we all) and as I mentioned here, I have ways to keep it all together.  Finding yummy meals I can make quickly is one of them.  This chicken was AH-mazing!  Delicious, moist, flavorful, and quick!  You can find the recipe here.  The only tweeking I did was that I used only baby arugula for the greens, and because arugula can be a little peppery, and because I just bought this super yummy balsamic fig vinegar from this place and was dying to use it … I threw a little drizzle on the greens with olive oil and tossed them before placing them on the gravy base.  It was delicious I tell you!  And in the recipe book, she suggests her Roquefort, Pear, & Walnut toasts alongside or as an appetizer.  YUM!  Unfortunately, I don’t have a picture of these because they were gobbled up too fast.  They are pretty enough to be served to guests and so easy to make, you can do it on a weeknight (like I did).
